Marinate briefly
Tempeh absorbs wort quickly. Watering too long makes it softer.
This Tempeh Goreng recipe uses tempeh slices, a simple spice marinade and hot oil. The marinade is briefly absorbed, then the tempeh is fried in portions and served with sambal or kecap manis.
Why this recipe works
Tempeh has a nutty taste and absorbs marinade well. Do not cut it too thin or it will dry. A short marinade with garlic, coriander and turmeric is enough to make the tempeh aromatic when frying.
