Pear and Goat’s Cheese Flammkuchen

Crisp Flammkuchen is topped with crème fraîche, thin pear slices, goat’s cheese, red onion and walnuts.

Method

    Knead flour, water, olive oil and salt for 5 minutes to a smooth dough. Cover and leave to rest at room temperature for 20 minutes.

    Preheat the oven strongly

    Preheat the oven with turned sheet or brick to 250 °C top/bottom heat. Allow to heat up completely for at least 20 minutes.

    Preparing the flooring

    Cut pears into very thin wedges. Provide onion rings, goat cheese, Walnuts and thyme.

    Roll out and occupy dough

Complete 80 g of fine bacon strips and reduce the goat cheese to 100 g and additional salt.

Replace the goat cheese with 100 g of mild blue cheese and use some finely cut rosemary needles instead of thyme.
