Zucchini contains a lot of water and quickly becomes soft in thin slices. For the air fryer, daumendicke batons are better suited. A light breading of flour, egg, panko and parmesan protects the surface and brings toasted aromas without draining the vegetables beforehand.

Air Fryer Zucchini

Thick courgette pins with panko-parmesan crust become golden brown outside in the air fryer, while the vegetables remain juicy and stable inside.

    Cut pins

    Wash the zucchini, remove the ends and cut them in half. Cut each half lengthwise into roughly daumendicke pins and pat dry.

    Preparing the Panierstrasse

    Place flour on a plate. Mix eggs with half of the salt and pepper. Mix panko, parmesan, herbs and remaining salt.

    Bread the zucchini

    Turn batons thinly into flour, pull through the egg and roll loosely in the panko mixture. Do not squeeze the breading tightly.

    Thin oils

    Preheat air fryer to 190 °C. Spray all around zucchini sparingly with oil or gently brush.

    Cook in batches

    Place batons in a position in the basket. Cook for 5 minutes, gently turn around and bake for another 3 to 5 minutes golden brown.

    Serve immediately

    Let zucchini sit briefly on a grid and serve hot with yoghurt-herb dip.

Tips for Air Fryer Zucchini

Keep batons thick enough

Thin zucchini loses water before the breading browns. Thumb-thick batons retain a juicy centre.

Distribute oil evenly

Dry crumbs remain pale. A very fine oil film is enough to roast Panko and Parmesan golden brown.

Only one location to cook

Glue together and dampen overlying sticks. In a small basket, better plan several short passages.

Variations

How to adapt this recipe

Replace Parmesan with another 35 g of panko and a tablespoon of sesame. Keep salt and add a vegan dip.

Add half a teaspoon of chilli flakes or cayenne pepper to the panko mixture and serve with lime yoghurt.
