What matters
Hot filling softens chilled pastry and can split the seam.
Air fryer chard and feta strudel in puff pastry. Cook stalks before leaves, drain the filling and cool it well before wrapping and baking.
Why this recipe works
A short strudel about 18 cm long fits a wide basket and makes two small portions. Let vegetables steam off before wrapping; allow extra cooling in a warm kitchen.
Recipe
Air fryer chard and feta strudel in puff pastry. Cook stalks before leaves, drain the filling and cool it well before wrapping and baking.
Finely dice chard stalks and slice leaves. Fry stalks and onion in oil about 5 minutes, add leaves for another 2 minutes. Drain and cool at least 10 minutes.
Squeeze chard and mix with crumbled feta, salt and pepper. Lay pastry in a rectangle about 22 × 20 cm. Fill, fold ends in and roll firmly without stretching.
If required by the manufacturer, preheat for 3 minutes at 170 °C. Place seam down on a suitable shallow baking tray. Brush with measured egg and make shallow top slits. Bake about 22 minutes at 170 °C until sides are cooked too. Use a heatproof dish suitable for the appliance, leaving space around it for airflow. Do not preheat with loose paper.
Filling must be hot and inner pastry no longer raw or sticky. Lift out with a wide spatula and divide carefully. Check that the thickest part reaches at least 70 °C for 2 minutes; continue cooking if needed.
