Ingredients

Method

  1. 1

    Precook and drain

Boil potatoes in water about 30 minutes until tender. Add small broccoli florets for the final 5 minutes and drain everything well. Test potato centres with a knife; boil longer if needed.

  2. 2

    Fill and assemble

Cool potatoes about 5 minutes, halve lengthways and scoop out some flesh while leaving a sturdy rim. Mix flesh with roughly chopped broccoli, yogurt, salt and pepper and return all filling.

  3. 3

    Cook

If required by the manufacturer, preheat for 3 minutes at 180 °C. Brush skins thinly with oil, space in basket and grate Gouda over. Bake about 10 minutes at 180 °C. Filling must be hot through again and cheese lightly golden.

  4. 4

    Check and serve

Lift with a broad spatula rather than gripping the filled top. Serve two halves each. If basket is too small, bake in sequence and allow extra time.

Mix it with broccoli and return it all, rather than discarding.

Scooping too deeply or handling while very hot weakens them. Leave a rim and cool briefly.
