What matters
Do not add raw potato cubes; potatoes must be precooked.
Air fryer potato pea muffins with egg and Gouda. Cool and mash precooked potatoes, then spoon into small moulds for a soft savoury bake.
Why this recipe works
Six small muffins make three side servings. Preparation includes 10 minutes cooling potatoes. Use suitable stable moulds; a smaller basket needs extra batches.
Recipe
Air fryer potato pea muffins with egg and Gouda. Cool and mash precooked potatoes, then spoon into small moulds for a soft savoury bake.
Dice potatoes small and boil about 15 minutes until tender. Add peas for final 3 minutes or follow longer pack directions. Drain and cool about 10 minutes.
Mash potatoes coarsely, not into sticky puree. Mix egg, milk, flour, grated Gouda, salt and pepper, fold in peas. Butter six moulds and fill no more than two thirds. Use a heatproof dish suitable for the appliance, leaving space around it for airflow. Do not preheat with loose paper.
If required by the manufacturer, preheat for 3 minutes at 170 °C. Bake about 20 minutes at 170 °C. Centres must set and cook through, not only cheese tops. Do not crowd a smaller basket. Check that the thickest part reaches at least 70 °C for 2 minutes; continue cooking if needed.
Release carefully and serve two each as a side. They stay softer inside than bread muffins. Do not crush hot soft pieces with pointed tongs.
