Recipe
Air fryer tomato ricotta tart with shortcrust pastry and egg. Prebake the base, thinly slice tomatoes and drain well before topping the filling.
Oil tin, line pastry with low rim, prick base and chill about 10 minutes. Slice tomatoes thinly and drain released juice. Use a heatproof dish suitable for the appliance, leaving space around it for airflow. Do not preheat with loose paper.
If required by the manufacturer, preheat for 3 minutes at 170 °C. Prebake empty base about 7 minutes at 170 °C. Press small bubbles down gently with spoon. Use no loose weights or paper in airflow.
Mix ricotta, egg, salt and pepper and fill. Lay tomatoes flat and press oregano lightly. Bake about 23 minutes at 160 °C. Centre must set and base cook through. Check that the thickest part reaches at least 70 °C for 2 minutes; continue cooking if needed.
Cool in tin about 10 minutes, release carefully and divide. Finish raw pastry before cooling. Count four slices as snacks or meal components.
