What matters
A vegetable slicer helps make even ribbons; use its finger guard.
Air fryer courgette ricotta rolls in tomato sauce. Precook thin vegetable ribbons, fill with cheese and bake upright in a shallow dish.
Why this recipe works
Eight small rolls make two vegetable servings without bread. Weigh usable long ribbons, not trimmed ends. A shallow dish about 18 × 14 cm supports the rolls. Preparation includes 5 minutes cooling.
Recipe
Air fryer courgette ricotta rolls in tomato sauce. Precook thin vegetable ribbons, fill with cheese and bake upright in a shallow dish.
Slice courgette lengthways into eight broad ribbons about 3 mm thin. Save offcuts for another dish. Thinly coat ribbons with oil and half the salt.
If required by the manufacturer, preheat for 3 minutes at 180 °C. Precook two batches of four ribbons about 6 minutes each at 180 °C until flexible. Do not crisp. Cool and drain about 5 minutes until they bend without tearing.
Mix ricotta, Parmesan, pepper and remaining salt. Spread passata and oregano in dish. Spread cheese evenly on ribbons, roll loosely and stand close together in sauce. Use a heatproof dish suitable for the appliance, leaving space around it for airflow. Do not preheat with loose paper.
Bake about 16 minutes at 170 °C until sauce bubbles and ricotta centres are hot. Remove with gloves and carefully lift onto plates with sauce.
