Air fryer spinach ricotta mini calzone with homemade yeast dough. Let dough rise before filling and thoroughly squeeze the cooked spinach.
Why this recipe works
Four small pockets make two servings. Preparation includes 60 minutes rising and 5 minutes cooling filling. Cooking includes two batches. This uses yeast dough, not ready-made puff pastry.
Recipe
Air fryer spinach ricotta mini calzone with homemade yeast dough. Let dough rise before filling and thoroughly squeeze the cooked spinach.
Knead flour, yeast, salt, lukewarm water and oil about 8 minutes. Cover and rise about 60 minutes until visibly airy. Do not use hot water.
Wilt spinach with clinging rinse water about 4 minutes in a pan. Drain, cool about 5 minutes, squeeze firmly and chop. Mix ricotta and pepper.
Divide into four and roll circles about 14 cm. Fill one half leaving a border. Fold, seal edges firmly, slit top and brush with milk.
If required by the manufacturer, preheat for 3 minutes at 180 °C. Bake two batches of two about 13 minutes each at 180 °C. Check base and thick seam for raw dough; filling must be hot. Extend if needed, especially the first piece. Use a heatproof dish suitable for the appliance, leaving space around it for airflow. Do not preheat with loose paper.
