Why this recipe works

Outer layers become small bowls

Two large peeled onions make four filled halves and two light servings. Hydrate couscous separately. Extra filling cooks alongside in the same dish rather than being discarded.

Recipe

Air fryer couscous-stuffed onions

Ingredients

2 servings

Method

  1. 1

    Prepare

Halve onions lengthways and boil about 10 minutes until nearly tender. Drain and gently remove centres, leaving two outer layers as shells.

  2. 2

    Mix and season

Pour the 70 ml boiling hydration water and salt over couscous; rest about 5 minutes as the pack directs. Chop onion centres, fry in oil about 5 minutes and mix with diced tomato, couscous and pepper.

  3. 3

    Cook

If required by the manufacturer, preheat for 3 minutes at 170 °C. Fill onion shells in a shallow dish and place extra filling alongside. Grate Gouda over. Bake about 18 minutes at 170 °C until onions are tender and filling hot. Use a heatproof dish suitable for the appliance, leaving space around it for airflow. Do not preheat with loose paper.

  4. 4

    Check and serve

Test thick onion bases with a knife. Serve two halves each with extra filling. Do not eat tough root remnants.
