What matters
A completely smooth chickpea paste is often harder to turn than a coarse mash.
Air fryer chickpea carrot patties bound with egg and breadcrumbs. Mash cooked chickpeas coarsely, chill the mixture and bake small flat patties.
Why this recipe works
Eight flat patties make two servings without dip. Preparation includes 15 minutes in the refrigerator. Use already cooked canned chickpeas, not raw soaked pulses.
Recipe
Air fryer chickpea carrot patties bound with egg and breadcrumbs. Mash cooked chickpeas coarsely, chill the mixture and bake small flat patties.
Rinse, drain and dry chickpeas. Mash coarsely with fork or masher. Finely grate carrot, gently squeeze excess juice and finely chop onion.
Mix with egg, crumbs, cumin, salt and pepper. Cover and chill about 15 minutes. Shape eight equal patties about 1 cm thick and lightly brush both sides with the oil.
If required by the manufacturer, preheat for 3 minutes at 180 °C. Bake two batches of four for about 14 minutes each at 180 °C. Carefully turn halfway with a broad spatula. Do not shake the basket. The egg and breadcrumb centre must cook through. Check that the thickest part reaches at least 70 °C for 2 minutes; continue cooking if needed.
Transfer with a spatula and let firm briefly. Serve four patties each. Centres should be soft but not raw and sticky; cook longer if needed.
