Air Fryer Stuffed Peppers

Pepper halves are first softly pre-cooked in the air fryer and then filled with couscous, chickpeas, tomatoes and feta.

Method

    Let Couscous Source

    Pour the couscous with a hot vegetable broth, cover and let it swell for 8 minutes. Then loosen with a fork.

    Halve peppers

    Halve pods lengthwise, remove seeds and white partitions. Rub in outsides with little oil.

    Cook pods

    Preheat air fryer to 180 °C. Preheat paprika halves with the cutting surface upwards for 7 to 9 minutes.

    Mix filling

    Mix couscous with chickpeas, tomatoes, two thirds of the feta, spring onions, lemon, oregano, salt and pepper.

    Fill

    Gently remove peppers, fill in the couscous mixture and sprinkle over the rest of the feta.

    Bake ready

    Cook the filled halves for another 7 to 9 minutes at 180 °C until the peppers are soft and the feta is slightly browned.

Halve pods

Half peppers are stable and cook faster. Whole stuffed pods only fit in high, large appliances.

Precook peppers first

The filling is already cooked. Without a head start the pod would remain firm or the couscous would dry out.

Keep Couscous loose

Do not push filling firmly into it. Some air between the grains allows heat to penetrate more evenly.

Variations

How to adapt this recipe

Replace Couscous with 160 g of fine bulgur and, according to the package, cook or cook in the vegetable broth.

Replace feta with 120 g cubed smoked tofu and adjust the amount of salt only after tasting.
