Why this recipe works

Plain tempeh rather than seasoned strips

This makes two light protein-and-vegetable portions without rice. Use pasteurised plain soy tempeh. The method is not intended for raw home-fermented tempeh.

Ingredients

2 servings

Method

  1. 1

    Prepare

Cut tempeh into cubes about 1.5 cm. Slice pepper into narrow strips and onion into thin wedges. Follow the tempeh pack’s heating instructions.

  2. 2

    Mix and season

Mix oil, soy sauce and paprika. Toss with tempeh and vegetables and marinate 10 minutes. Avoid a pool of liquid marinade.

  3. 3

    Cook

If required by the manufacturer, preheat for 3 minutes at 180 °C. Spread loosely in basket and roast about 16 minutes at 180 °C. Toss carefully after 8 minutes. Tempeh must be hot throughout and peppers tender.

  4. 4

    Check and serve

Add lemon juice only after roasting. With a very small basket use extra batches rather than stacking deeply.
