Ingredients

Method

  1. 1

    Prepare

Rinse beans and corn and dry thoroughly. Mash beans coarsely. Chop corn roughly so large kernels do not break the surface. Finely chop onion.

  2. 2

    Mix and shape

Mix egg, crumbs and seasonings, chill about 15 minutes. Form twelve balls about 4 cm across and brush with oil. Avoid large dense balls.

  3. 3

    Cook

If required by the manufacturer, preheat for 3 minutes at 180 °C. Bake two batches of six about 16 minutes each at 180 °C, turning gently halfway. Cook egg-containing centres fully even though beans were precooked. Check that the thickest part reaches at least 70 °C for 2 minutes; continue cooking if needed.

  4. 4

    Check and serve

Lift carefully and let firm briefly. Serve four balls each. Centres are soft and bean-like, not dry falafel made from raw chickpeas.
