What matters
Fine vegetable shreds cook faster than thick cubes in the batter.
Air fryer vegetable pakoras with chickpea flour, carrot and spinach. This baked adaptation uses shallow stable moulds rather than deep-frying.
Why this recipe works
Twelve flat cakes make four snack servings. Unlike deep-fried pakoras they stay softer inside. Timing includes two batches of six moulds in a sufficiently wide basket. Use commercially roasted chickpea flour, not home-ground raw pulses. Follow the pack’s cooking instructions and do not taste raw batter.
Recipe
Air fryer vegetable pakoras with chickpea flour, carrot and spinach. This baked adaptation uses shallow stable moulds rather than deep-frying.
Finely grate carrot, slice onion very thinly and chop spinach. Mix chickpea flour with water, salt, cumin and paprika into a thick batter.
Mix in vegetables and rest 10 minutes. Grease twelve stable shallow moulds about 6 cm across with the oil. Fill about 1 cm deep, not like thick muffins. Use a heatproof dish suitable for the appliance, leaving space around it for airflow. Do not preheat with loose paper.
If required by the manufacturer, preheat for 3 minutes at 180 °C. Bake two batches of six about 15 minutes each at 180 °C. Allow extra batches in smaller baskets. Chickpea batter must be fully cooked inside, not raw and sticky.
Release with a small spatula. Cut one open to check the centre and bake longer if needed. Serve warm; dips are not included.
