Air Fryer Vegetables

Broccoli, paprika, red onion, mushrooms and zucchini are added to the air fryer in a time-shifted manner so that each variety cooks appropriately.

    Prepare vegetables dry

    Wash vegetables and dry carefully. Cut broccoli into small roses, onion in wedges, peppers into 3 cm large pieces, zucchini into thick crescents and halve mushrooms.

    Season solid varieties

    Mix broccoli and onion with 1 tablespoon of oil, half of the oregano and little salt.

    Precautions

    Preheat air fryer to 190 °C. Cook broccoli and onion for 4 minutes and then shake the basket.

    Add any remaining vegetables

    Mix peppers, zucchini and mushrooms with the rest of the oil, oregano, salt and pepper. Add to the basket and spread everything loosely.

    Roast together

    Cook vegetables for another 8 minutes at 190 °C. Turn once and then cook for 2 to 4 minutes until broccoli is tender-crisp and the edges are browned.

    Flavouring

    Place vegetables in a serving dish, season with lemon juice and serve immediately. Add salt only now if necessary.

Stagger by cooking time

Broccoli and onion need a little advantage. Water-rich zucchini and mushrooms stay better in baking pan due to the later addition.

Vegetables really dry

Wet roses and mushrooms release additional steam. A dry surface promotes roasting aromas and prevents an watery basket base.

Leave air between the pieces

In a smaller basket, halve the amount. Closely packed vegetables are soft, but hardly browned.

How to adapt this recipe

In the last 6 minutes add 200 g of Halloumi in 2 cm cubes. Salt the vegetables cautiously because of the salty cheese.

Replace zucchini and mushrooms with thin carrot and pastine batons. Cook them together with the broccoli from the beginning.
