Broccoli frogs react faster in the air fryer than their solid stems. Therefore, large roes are halved and thick stems are peeled as well as cut smaller. A little water in the seasoning mixture produces steam at the beginning without preventing the subsequent roasting.

Air Fryer Broccoli

Broccoli is strongly roasted in the air fryer on the roseskins and remains tender-crisp in the stem when the pieces are equally large and slightly moistened.

Method

    Splitting broccoli

    Wash broccoli and drain well. Divide into about 4 cm large florets. Peel thick pieces of stems and cut into 1 cm thick slices.

    Mix the seasoning mixture

    Mix olive oil, water, garlic powder, salt and pepper in a large bowl.

    Wetting of roses

    Turn broccoli thoroughly in a mixture. The liquid should get especially into the cutting surfaces of the stems without collecting on the bowl bottom.

    Roast hot

    Preheat air fryer to 185 °C. Put broccoli loosely in the basket and cook for 5 minutes.

    Shake and cook ready

    Shake the basket vigorously. Cook for another 3 to 5 minutes until the rosescrews are brown and the stems are slightly resistant.

    Add Parmesan

    Mix broccoli immediately with parmesan, finely rubbed lemon peel and a splash of lemon juice. Season and serve.

Also use the stem

Peeled broccolistiel tastes mild and cooks in thin slices at the same time with the florets. Cut off only the dry end.

A little water is enough

The tablespoon of water protects fine tips in the first minutes. More liquid would brake the roasting and vaporize the basket unnecessarily.

Spread loosely

Overlaying Röschen cook unevenly. In small basket divide the amount and refresh the first portion later briefly.

Variations

How to adapt this recipe

Leave out Parmesan and season the finished broccoli with a tablespoon of roasted sesame and a few drops of sesame oil.

Add a small pinch of chilli flakes into the oil mixture and season with lime instead of lemon after cooking.
