Why this recipe works

Good draining prevents watery sauce

Halve two chicory heads and wrap in cooked ham. A shallow dish about 18 × 14 cm holds vegetables and sauce. This makes two light portions without potatoes.

Ingredients

2 servings

Method

  1. 1

    Prepare

Halve chicory lengthways, trimming the core sparingly. Precook in water with lemon juice about 8 minutes and drain thoroughly.

  2. 2

    Mix and season

Butter the dish. Pat chicory dry and wrap with ham. Mix cream cheese, milk, salt and pepper and pour over the halves. Use a heatproof dish suitable for the appliance, leaving space around it for airflow. Do not preheat with loose paper.

  3. 3

    Cook

If required by the manufacturer, preheat for 3 minutes at 170 °C. Add cheese and bake about 17 minutes at 170 °C. If cheese darkens too much, lower temperature and continue heating the centre.

  4. 4

    Check and serve

Check that the core is tender and the centre sauce hot. Portion carefully.
