What matters
Wet slices shed their coating: dry thoroughly before filling.
Air fryer celeriac cordon bleu with cooked ham and Gouda. Precook the slices, fill, bread carefully and bake with a thin coating of oil.
Why this recipe works
Four celeriac slices about 1 cm thick make two filled pieces. The ham means this is not vegetarian. Cooling and breading are included in preparation time.
Recipe
Air fryer celeriac cordon bleu with cooked ham and Gouda. Precook the slices, fill, bread carefully and bake with a thin coating of oil.
Cut celeriac into four slices about 1 cm thick and 10 cm wide. Boil about 8 minutes until tender but intact. Drain, dry and cool 10 minutes.
Sandwich ham and Gouda between pairs of slices, leaving edges clear. Season. Coat in flour, egg, then crumbs, press edges and brush outside with oil.
If required by the manufacturer, preheat for 3 minutes at 180 °C. Bake spaced apart about 20 minutes at 180 °C. Turn carefully after 10 minutes with a wide spatula. Filling must be hot and egg fully cooked, not just the crust browned. Check that the thickest part reaches at least 70 °C for 2 minutes; continue cooking if needed.
Lift out carefully without touching leaked cheese. Serve one filled piece each; the filling is very hot.
