What matters
Even thin slices help more than greatly increasing temperature.
Air fryer celeriac and apple gratin with Gouda and mustard cream. Precook thin celeriac slices, then layer with raw apple in a shallow dish.
Why this recipe works
Three side servings from a shallow dish about 18 × 14 cm. Weigh celeriac and apple peeled. Layer no deeper than 3 cm so the centre heats reliably.
Recipe
Air fryer celeriac and apple gratin with Gouda and mustard cream. Precook thin celeriac slices, then layer with raw apple in a shallow dish.
Slice celeriac about 3 mm thin. Boil about 8 minutes until nearly tender, then drain well. Slice apple thinly too.
Butter dish and loosely layer celeriac and apple. Mix milk, cream, mustard, salt and pepper and pour over. Grate Gouda and reserve. Use a heatproof dish suitable for the appliance, leaving space around it for airflow. Do not preheat with loose paper.
If required by the manufacturer, preheat for 3 minutes at 170 °C. Cook first about 20 minutes at 170 °C. Test slices with a knife. Add Gouda and finish about 5 minutes at 170 °C.
Bottom celeriac slices should be tender too. Remove with gloves and serve with sauce as a side. Golden cheese alone is not a doneness test.
