Cut celeriac very finely
Thin sticks or fine shreds are more pleasant to eat raw than thick pieces. A kitchen grater makes preparation easier.
Celeriac is finely cut and immediately mixed with dressing. Pear, cheese strips and pumpkin seeds complete the autumn salad.
Why this recipe works
Raw celeriac forms the base here instead of leafy salad. Pear adds mild fruitiness, while Gouda and pumpkin seeds contribute texture. Yogurt dressing coats the fine sticks. The quantities are intended for two light meals.
Recipe
Fine raw celeriac sticks, pear and Gouda in yogurt mustard dressing, scattered with pumpkin seeds.
Mix yogurt, lemon juice, olive oil, mustard, salt and pepper until smooth in a large bowl.
Cut peeled celeriac into very fine sticks or coarsely grate it. Immediately mix with dressing so the surfaces are coated.
Cut cored pear into thin slices or sticks. Cut Gouda into fine strips. Fold both gently into the celeriac.
Divide salad between bowls and scatter with pumpkin kernels. Serve immediately. The quantity is calculated as two light meals; additional bread is not included.
