Do not use pickled beetroot
Red beet, pickled in vinegar, brings a different taste and can make a lot of brew. The basic version uses only cooked, unpickled beetroot.
This recipe begins with cooked, unpickled beetroot. The tubers are well dried, heated with oil and served with feta and fresh parsley.
Why this recipe works
The short cooking time does not apply to raw tubers. It is used to cook ready-to-eat beets, for example from an unopened vacuum pack. Acetic acid and sweet sour pickled products alter taste and amount of liquid. The 350 g are weighed after draining. Together with the feta, two small vegetable and cheese portions are created, not complete main meals.
Recipe
Precooked beetroot is roasted in wedges. Feta is only added in the final phase and remains soft inside.
Drain well the beetroot, pat dry and cut into approximately 2 cm wide wedges. Weigh 350 g only after draining. Have a flat suitable shape of about 18 by 14 cm.
Mix with oil, salt and pepper and spread flat in the dish. Preheat for 3 minutes to 180 °C if necessary. Put the mould in the basket, let air around and cook for about 10 minutes at 180 °C.
Gently turn the wedges, crumble the feta into larger pieces and cook for about 6 minutes at 180 °C. The cheese should be soft and slightly browned, not completely dry.
The vegetables must also be hot in the middle. Cook longer if necessary. Add lemon juice and parsley after removal and divide into two small portions.
