Why this recipe works

Sushi rolls are made with properly seasoned sushi rice, nori leaves and neatly prepared fillings. The rice is seasoned with rice vinegar, sugar and salt, not with soy sauce.
Wash sushi rice thoroughly until the water becomes clearer, cook with water and then leave to rest for 10 minutes.
Heat the rice vinegar, sugar and salt until everything dissolves, then fold into the warm rice and let cool lukewarm.
Cut cucumber, avocado and fish or cooked alternative into dry, even strips.
Lay nori on a bamboo mat, spread rice thinly, lay on filling and roll up firmly.
Cut rolls with a moistened sharp knife. Serve with soy sauce, wasabi and ginger.
