Why this recipe works

Nasi Goreng with Kecap Manis and fried egg

For Nasi Goreng, dry, chilled rice is more important than many extras. Fresh rice contains too much moisture and quickly becomes muddy. Kecap Manis brings the typical dark sweetness, sambal adds spice and a fried egg completes the plate.

Kitchen know-how

Tips for Nasi Goreng

Use cold rice

Rice from the previous day is drier and roasts more fluently. Fresh rice quickly becomes sticky in the wok.

High heat

Nasi Goreng needs short, strong heat. Too low heat steams the rice instead of frying it.

Dosing Kecap Manis

Kecap Manis is sweet and dark. Do not use it so much and season at the end.

Variations

How to adapt this recipe
