This fried rice recipe uses cooled rice, eggs, peas, carrots, spring onions, garlic, ginger and light soy sauce. Everything is prepared and fried over high heat briefly to keep the grains loose.
Why this recipe works
The most important step is before cooking: rice should be cooked, cooled and dry. Fresh warm rice contains too much moisture and quickly becomes sticky. Egg, vegetables and sauce are prepared separately so that everything in the wok is quick.
Recipe
Fried rice is best with cold rice from the day before, egg, vegetables, soy sauce and high heat. The rice should be fried, not steamed in a wok.
Break up cold rice with your hands or fork. Mash lumps and make all the ingredients available.
Heat oil in a wok, add eggs and let them coarsely thicken. Remove or push to the edge.
Fry garlic, ginger and vegetables briefly over high heat.
Add rice and turn until hot. Let soy sauce run in on the edge and mix well.
Fold in the egg, spring onions, sesame oil and sesame seeds. Serve immediately.
