Recipe
Melon and Cucumber Gazpacho is a cold summer soup made from melon, cucumber, yoghurt, lime, mint and olive oil. It is finely pureed and served well chilled.
Core and chop the melon. Wash cucumber, roughly chop and pluck the mint.
Puree melon, cucumber, yoghurt, lime juice, mint, olive oil and salt in a blender until smooth.
If the soup is too thick, mix in a little cold water and keep it creamy but easily spoonable.
Cover the gazpacho and refrigerate for at least 1 hour.
Season again with lime, salt and chilli. Serve cold with mint and a little olive oil.
