Mapo tofu is cooked with soft tofu, doubanjiang, fermented black beans, minced meat, chilli oil and Sichuan pepper. It is said to taste spicy and slightly numbing.

    Cut tofu into cubes and leave to stand in hot salted water for 2 minutes. Drain carefully.

    Roast mince and seasoning paste

    Heat oil, fry minced meat. Fry the doubanjiang, black beans, garlic and ginger briefly.

    Cooking sauce

    Add stock, soy sauce and sugar and bring to the boil.

    Cook the tofu

    Place the tofu in the sauce and leave to stand gently for 5 minutes. Do not stir too much.
