Keep the juice in the dough
All the grated apple and juice are counted. Squeezing it out would change texture and composition.
The apple keeps its skin and juice in the dough. Shape the cookies with spoons and bake without glaze.
Why this recipe works
Grated apple keeps the cookies soft inside. Brief mixing and soft butter help portioning. The recipe makes twelve cookies, six snack servings of two each.
Recipe
Soft-baked light spelt cookies with grated apple, butter and a little lemon juice.
Preheat oven to 180 °C conventional top and bottom heat. Line a tray with baking paper. Wash and core apple, then finely grate with its skin. Mix with lemon juice and keep all fruit juice.
Briefly beat soft butter with sugar until creamy. Beat in all the egg, then add grated apple and juice. Mix flour, baking powder and salt separately and stir only briefly into the wet mixture.
Use two spoons to put all the dough in twelve similarly sized mounds on the tray. Press slightly flat with the back of a spoon and leave some space between cookies. Use no extra working flour.
Bake on the middle shelf for about 18 to 22 minutes until edges are lightly golden and centres fully baked. Extend if needed; they must no longer be raw and doughy. Cool on a rack for about 5 minutes. This phase is included in preparation time. This makes twelve soft cookies, six snack servings of two each, without glaze.
