Use pear with its juice
Finely grated pear with its released juice supplies the moisture intended for this dough. Do not add extra liquid.
Grated pear supplies moisture to the dough. Fine rolled oats and ground almonds are baked with egg and butter into small soft cookies.
Why this recipe works
Finely grated pear and its juice go into the dough. After briefly absorbing moisture, the mixture can be shaped into small rounds and fully baked. They stay soft inside and suit breakfast or a small sweet snack. The recipe makes twelve cookies for four servings.
Recipe
Soft oat cookies with finely grated pear and ground almonds, baked until golden in the oven.
Preheat oven to 180 °C with conventional top and bottom heat and line a tray with baking paper. Finely grate pear, keeping the released juice.
Mix butter with sugar and salt. Stir in egg and grated pear with its juice. Mix oats, almonds and baking powder and fold in. Leave for about 5 minutes so the oats absorb moisture. This time is included in preparation.
Use a spoon to place 12 spaced mounds on the tray and flatten with lightly damp hands into rounds about 1 cm thick. Bake on the middle shelf for about 20 to 25 minutes until edges are golden and centres fully set; the egg dough must no longer be raw inside.
Let cookies cool on the tray for about 5 minutes, then carefully transfer to a rack. They remain soft because of the pear. Each serving contains 3 cookies. The short cooling period is included in the total time.
