Mix cocoa cold first
Blending cocoa smooth with water and sugar helps it disperse in the milk when heated.
Instant polenta thickens in cocoa milk while halved grapes warm in a pan. The breakfast is served immediately, soft and hot.
Why this recipe works
Cornmeal also works in sweet dishes. Pure cocoa supplies the chocolate flavour here without added chocolate. Grapes mostly hold their shape during brief heating. The quantities make three warm breakfast servings.
Recipe
Creamy cornmeal with unsweetened cocoa and milk, served with pale grapes briefly warmed in butter.
Halve grapes. In a saucepan, mix cocoa powder with water and 20 g sugar until smooth. Add milk and salt.
Bring cocoa milk to a boil, stirring. Sprinkle in polenta while whisking vigorously. Simmer gently over low heat, stirring frequently, according to the package for about 5 minutes until creamy and the grains are fully hydrated. Add a little water if needed.
Meanwhile melt butter in a pan over medium heat. Add grapes and remaining 5 g sugar and warm for about 4 minutes, turning gently. The fruit should be hot but retain most of its shape.
Divide chocolate polenta straight into bowls and add warm grapes with the little pan juice. Serve warm; the polenta firms as it cools.
