Oat and sunflower seed granola with apple yogurt

Golden toasted oats and sunflower seeds on plain yogurt with fresh apple cubes.

Ingredients

4 servings

Method

  1. 1

    Mix granola

Preheat oven to 160 °C conventional top and bottom heat. Stir sugar, water and oil together in a bowl. Mix in oats, sunflower seeds and salt thoroughly until evenly lightly moist.

  2. 2

    Roast

Spread mixture thinly on a tray lined with baking paper. Roast on the middle shelf for about 20 to 25 minutes until golden, turning gently halfway through. Watch near the end and remove before flakes or seeds darken.

  3. 3

    Cool

Let granola cool completely on the tray for about 15 minutes. It becomes crisper as it cools. Then break loosely into small pieces.

  4. 4

    Prepare apple yogurt and serve

While granola cools, wash apple, remove core and dice small. Mix with yogurt and divide between bowls. Add all the cooled granola on top and serve immediately. The quantity makes four breakfast servings; preparation time includes cooling.

Tips for Oat and sunflower seed granola with apple yogurt

Do not roast too dark

Oven and tray affect browning. Check regularly near the end; warm granola that is still slightly soft firms as it cools.

Combine with yogurt only when eating

Moisture from yogurt and apple softens toasted oats again. Combine components only immediately before serving.
