Why this recipe works

Potatoes bind the drained fish

Six small fishcakes make two portions without sides. Tuna is canned, but egg enters the mixture raw. Cook the centre thoroughly too.

Method

  1. 1

    Prepare

Boil potatoes in 1 cm cubes in the water for about 12 minutes until soft. Drain, mash and cool for 10 minutes.

  2. 2

    Mix and season

Squeeze tuna dry. Mix with potatoes, egg, crumbs, onion, parsley, salt and pepper. Shape six patties about 1.5 cm thick and brush with oil.

  3. 3

    Cook

If required by the manufacturer, preheat for 3 minutes at 180 °C. Cook in one layer about 16 minutes at 180 °C. Turn carefully with a wide spatula after 8 minutes.

  4. 4

    Check and serve

Fishcakes must be set and hot inside. Allow extra batches if space is limited; do not stack. Check that the thickest part reaches at least 70 °C for 2 minutes; continue cooking if needed.
