Air fryer cod and potato fishcakes with raw fish and precooked potatoes. Shape flat, bake in two batches and check the centre carefully.
Why this recipe works
Eight flat fishcakes make two fish-and-potato servings without sauce. Boiling, cooling and two batches are included. Keep fish chilled until mixing.
Recipe
Air fryer cod and potato fishcakes with raw fish and precooked potatoes. Shape flat, bake in two batches and check the centre carefully.
Cut potatoes small and boil about 20 minutes until soft. Drain, steam dry and press. Cool at least 10 minutes. Finely chop fish just before mixing.
Mix cooled potato with fish, egg, 20 g crumbs, parsley, salt and pepper. Rest chilled 5 minutes. Shape eight flat cakes about 2 cm thick, coat with remaining 10 g crumbs and oil.
If required by the manufacturer, preheat for 3 minutes at 180 °C. Bake two batches of four, spaced apart, about 15 minutes each at 180 °C. Turn gently halfway. Fish and egg must cook fully in the thickest centre. Check that the thickest part reaches at least 70 °C for 2 minutes; continue cooking if needed.
Release with a spatula onto a clean plate. Potato keeps the centre soft, but it must not be raw, shiny or liquid.
