What matters
Fresh hot dumplings are often too soft to slice neatly.
Air fryer potato dumpling slices with herb quark. Slice fully cooked cold dumplings thickly and roast in separate batches with a little oil.
Why this recipe works
Two small servings with dip. Use large German half-and-half potato dumplings, not small Italian gnocchi. They must be fully cooked and safely chilled, not raw dough.
Recipe
Air fryer potato dumpling slices with herb quark. Slice fully cooked cold dumplings thickly and roast in separate batches with a little oil.
Slice cold cooked dumplings about 1 cm thick. Blot dry and gently coat with oil without breaking.
Mix quark, milk, finely sliced spring onion, parsley, salt and pepper until creamy. Chill until serving; do not bake dip.
If required by the manufacturer, preheat for 3 minutes at 180 °C. Roast two batches about 18 minutes each at 180 °C, turning gently halfway. Reheat centres fully; keep outsides light golden, not dark and dry. Check that the thickest part reaches at least 70 °C for 2 minutes; continue cooking if needed.
Lift with broad spatula and serve with cold quark. Edges may be lightly crisp, centres soft. Avoid repeated prolonged warm holding.
