Homemade air fryer potato croquettes from floury potatoes. Boil, let steam off and cool, then bind with egg, shape and coat in breadcrumbs.
Why this recipe works
Twelve small croquettes make three side servings. Boiling and cooling are included. Do not use prepared mash with milk, which is wetter than this mixture.
Recipe
Homemade air fryer potato croquettes from floury potatoes. Boil, let steam off and cool, then bind with egg, shape and coat in breadcrumbs.
Cut potatoes small and boil about 20 minutes until soft. Drain, let steam off dry and press. Cool at least 10 minutes until only lukewarm.
Divide beaten egg in half. Mix one half with starch, salt and pepper into potatoes. Form twelve short rolls about 2.5 cm across, coat in remaining egg then crumbs and oil lightly.
If required by the manufacturer, preheat for 3 minutes at 180 °C. Bake two batches of six about 12 minutes each at 180 °C. Turn gently halfway. Egg in the potato centre must cook fully too. Check that the thickest part reaches at least 70 °C for 2 minutes; continue cooking if needed.
Lift out with a spatula and serve four each as a side. Do not shake the hot basket roughly; soft filling may split.
