Why this recipe works
Solid natural tofu contains enough structure for the air fryer, but must lose as much surface water as possible before seasoning. Power binds the thin marinade and forms dry, crispy edges. A too large amount of sauce would dampen the tofu and can drip through the basket.
Recipe
Naturtofu is crispy outside in the air fryer when pressed dry, marinated with soy sauce and thinly coated with starch.
Wrap tofu in a clean cloth, place between two boards and weigh for 20 minutes with a heavy pot.
Cut pressed tofu into even cubes of about 2.5 cm edge length.
Mix soy sauce, vegetable oil, sesame oil, rice vinegar, ginger and garlic in a large bowl.
Gently turn the tofu cubes in the marinade. Dust over the starch and mix again until no dry nests remain.
Preheat air fryer to 190 °C. Cook tofu in a position 12 to 15 minutes and shake after 5 and 10 minutes.
Sprinkle tofu with sesame, spring onions and lime juice and serve immediately as bowl topping or snack.
