Air Fryer Sweet Potato Fries

Sweet potato chips with a thin layer of starch, little oil and smoked peppers are cooked in portions and salted afterwards.

    Cut pins

    Peel sweet potatoes and cut them in about 8 mm thick, as even as possible. Put very thin tips aside or cook shorter.

    Dry surface

    Douse batons dry with kitchen paper. In a large bowl, mix with starch until only a thin layer is visible.

    Add oil and spices

    Add rapeseed oil, both varieties of pepper and garlic powder and mix thoroughly. The salt remains outside.

    Preheat air fryer

    Preheat air fryer to 190 °C. Fill the sweet potato pins in a loose position and work in two portions if necessary.

    Turn multiple

    Cook fries for 10 minutes, shake vigorously and cook for another 6 minutes. Turn again and cook for 2 to 4 minutes until the desired browning.

    Salts and serve

    Salt ready fries immediately. If desired, mix yoghurt with a splash of lime juice and serve as a cool dip.

Cook in batches

Sweet potatoes give off moisture and become soft when layered narrowly. A loose layer is crucial for the surface.

Sugar browns fast

Sweet potatoes can get dark early on thin tips. From minute 16 on, check frequently and remove finished pieces.

Dosage starch sparingly

A thick, stained layer of starch remains floury. Dry the batons first and use only so much starch that they are hardly visibly coated.

How to adapt this recipe

Replace paprika with mild curry powder and season the hot fries with finely rubbed lime peel.

Leave out garlic and add a small pinch of cinnamon and chilli flakes. Serve with unsweetened lime yoghurt.
