Check the empty moulds fit first
First place the four empty moulds in the cold basket. They must not tip or stand so close that the air flow is missing.
A simple egg milk binds spinach and cheese to small hearty portions. The molds are filled only to two thirds and need space for circulating air.
Why this recipe works
Fresh spinach first collapses in the pan; visible water is evaporated. For the quantity four muffin moulds with a volume of about 100 ml are suitable for the device. You must be in the basket safely and without shaking. Four muffins make up two small portions of breakfast without bread or fruit. Thin paper cases alone are unsuitable for the liquid mass.
Recipe
Four small egg muffins with dry steamed spinach and gouda are cooked in heat-resistant moulds. The center is to be completely fixed.
Heat 4 g of oil in a small pan. Allow spinach to collapse for about 3 minutes and allow visible water to evaporate. Chop coarsely and let cool for about 5 minutes.
Four stable heat-resistant molds with the remaining 4 g oil grease. Beat the eggs and milk together, mix with spinach, gouda, salt and pepper. Distribute evenly, filling a maximum of two thirds of the height of the mould.
Preheat for 3 minutes to 160 °C if necessary. Place the moulds securely in the basket, with air in between and distance to the heating element. Cook for about 17 minutes at 160 °C; schedule more time in very deep forms.
The centre of the egg mixture must be fully set and reach at least 70 °C for 2 minutes. If it's still liquid, continue cooking. Allow to evaporate briefly, remove with oven gloves and loosen carefully. Two muffins each give a small portion of breakfast.

Aqueous leaves dilute the egg milk and can prolong cooking time. The pan phase is therefore part of the process.
