    Prepare salmon

    Check fillets for bones, dry with kitchen paper and pay attention to similar thickness.

    Mix mustard, honey, olive oil, 1 teaspoon of lemon juice and half a teaspoon of finely grated lemon peel.

    Seasonings

    Season the meat side of the fillets with salt and pepper and apply thinly with the glaze. The skin side remains free.

    Arrange in the basket

    Preheat air fryer to 180 °C. Salmon with the skin side down and put some distance into the basket. Do not stack the fillets.

    Cook in a nutshell

    Cook at 180 °C for 8 minutes. Check the thickest part, then cook for another 1 to 4 minutes depending on thickness. For fully cooked fish, aim for an internal temperature of about 63 °C.

Apply glaze only thin

A thick, dripping layer burns more easily because of the honey. Do not use the rest of the glaze raw as sauce.

Thickness is more important than weight

Two equally heavy fillets can be of different thickness. Therefore, adjust the time according to the thickest cross section and the measured internal temperature.

Replace honey and mustard with another teaspoon of olive oil, finely grated garlic and chopped parsley.

Replace lemon, mustard and salt with 1 tablespoon of soy sauce, 1 teaspoon of honey and finely grated ginger. Do not add salt because of the soy sauce.
