Why this recipe works
For home-made fish sticks, solid, bone-free white fish fillet is suitable. The fish must be dry before breading, so that flour, egg and panko adhere. In the air fryer, the breading is slightly drier than from the fryer, but absorbs significantly less fat and stays crispy with immediate serving.

Homemade fish sticks made of cod are crispy in the air fryer with panko outside, while the thick fish strips remain juicy.
Do the fillet dry, check for bones and cut into twelve strips about 2.5 cm wide, as thick as possible.
Mix the flour with pepper, pepper and half of the salt. Mix the eggs and put panko on a third plate.
First turn the strips in the flour, pull through the egg and cover around them with panko.
Preheat air fryer to 190 °C. Spray fish sticks on both sides finely with oil or gently brush.
In a position, cook for 5 minutes, gently turn around and bake for another 3 to 5 minutes until the breading is golden brown and the fish is opaque.
Check a thick piece: It should easily be split into flakes and be hot in the centre. Serve with lemon and dip.
