What matters
Use mustard as a thin adhesive layer, not a thick sauce beneath crumbs.
Air fryer saithe with mustard, dill and buttery breadcrumbs. Pat evenly thick thawed fillets dry and add a thin topping for balanced cooking.
Why this recipe works
Two fish servings without potatoes or sauce. Use saithe, not salted dried fish. Timing is for fully thawed boneless pieces about 2 cm thick.
Recipe
Air fryer saithe with mustard, dill and buttery breadcrumbs. Pat evenly thick thawed fillets dry and add a thin topping for balanced cooking.
Check fillets for bones and pat dry. Cook thin tail ends separately or check earlier. Wash, dry and finely chop dill.
Rub butter into crumbs and dill. Season fish, spread a thin mustard layer on top and gently press on crumbs. Place in a suitable shallow dish. Use a heatproof dish suitable for the appliance, leaving space around it for airflow. Do not preheat with loose paper.
If required by the manufacturer, preheat for 3 minutes at 180 °C. Cook about 14 minutes at 180 °C. Do not turn, so topping stays in place. Check the thickest centre and extend if needed; crust colour is not enough. Check that the thickest part reaches at least 70 °C for 2 minutes; continue cooking if needed.
Lift with a broad spatula and add lemon on the plate. This keeps the top drier for longer. Watch for fine overlooked bones.
Kitchen know-how
Use mustard as a thin adhesive layer, not a thick sauce beneath crumbs.
Fully frozen fillets need another method; allow extra thawing time.
