Do not skip chilling
The crumbs absorb moisture during the cooling phase. Immediately shaped, very soft pieces break more easily when turning.
These fishcakes are made of raw salmon fillet and are cooked completely. A short cooling phase strengthens the mixture before it comes into the oiled basket.
Why this recipe works
Very finely pureed fish can produce a compact, rubber-like mass. Small pieces, about 5 mm large, remain more pleasant. The egg and the bread crumbs bind the mixture, while twenty minutes in the refrigerator facilitate the forming. Four flat fishcakes produce two fish portions without potatoes, bread or sauce.
Recipe
Finely chopped fresh salmon is formed into four flat fishcakes with egg, crumbles and dill. The fish remains recognizable as small pieces.
Pat the fish dry and carefully check for bones. Chop with a sharp knife into small pieces of about 5 mm. Dice the onion very finely so that no large raw pieces remain in the mixture.
Mix salmon, egg, crumb, onion, dill, lemon juice, salt and pepper briefly. Covered, leave to rest in the refrigerator for about 20 minutes. Do not taste raw fish and egg.
Form four equally large, about 1.5 cm thick fishcakes. Brush with a part of the oil, grease the suitable basket insert with the rest thinly. Preheat for 3 minutes to 180 °C if necessary. Apply loosely and cook for about 14 minutes at 180 °C, gently turn after 8 minutes.
In the thickest piece reach at least 70 °C for 2 minutes and continue to cook if necessary. The mixture must be kept together and the fish meat completely cooked. Serve two fishcakes each without additional side dish.
