What matters
Long mixing after adding flour makes the rings tougher rather than lighter.
Air fryer quark cinnamon doughnuts baked as small cake rings. Made with quark, egg and baking powder, without yeast, deep-frying or sugar glaze.
Why this recipe works
Six small rings make three sweet servings. They have a cake crumb, not the airy texture of fried yeast doughnuts. Two baking batches and 10 minutes of cooling are included.
Recipe
Air fryer quark cinnamon doughnuts baked as small cake rings. Made with quark, egg and baking powder, without yeast, deep-frying or sugar glaze.
Lightly grease six stable heatproof doughnut moulds about 7 cm across with 5 g oil. Check three fit in the basket with airflow gaps. Use a heatproof dish suitable for the appliance, leaving space around it for airflow. Do not preheat with loose paper.
Mix egg, quark, milk, sugar and remaining 10 g oil until smooth. Fold in flour, baking powder and cinnamon briefly. Fill moulds no more than two-thirds; keep the second half of batter chilled.
If required by the manufacturer, preheat for 3 minutes at 160 °C. Bake two batches of three rings about 15 minutes each at 160 °C. Test with a skewer: no raw batter should cling. Extend gently depending on moulds.
Cool about 10 minutes on a rack, briefly in moulds first, then release carefully. Serve two rings each without extra glaze.
