What matters
Avoid working dough long in warm hands so butter pieces stay cold.
Air fryer blueberry scones with cold butter and fresh berries. Bring the dough together briefly, cut into wedges and bake in two spaced batches.
Why this recipe works
Six small scones, one per pastry serving. Two batches are included. Use fresh blueberries patted dry; frozen fruit changes temperature and moisture.
Recipe
Air fryer blueberry scones with cold butter and fresh berries. Bring the dough together briefly, cut into wedges and bake in two spaced batches.
Mix flour, baking powder, sugar and salt. Cube cold butter and rub briefly with fingertips to coarse crumbs. Wash and dry berries.
Briefly mix in milk and gently fold in berries. Do not knead smooth. Press into a disc about 2 cm thick and cut six wedges.
If required by the manufacturer, preheat for 3 minutes at 170 °C. Bake two batches of three wedges, spaced on a suitable shallow tray, about 14 minutes each at 170 °C. No raw flour dough should remain inside. Use a heatproof dish suitable for the appliance, leaving space around it for airflow. Do not preheat with loose paper.
Release with a spatula. A cut sample should show a set tender crumb; juicy warm berries are not raw dough. Calculated without extra butter or jam.
