What matters
Do not crowd them: slices open sideways as they bake.
Air fryer palmiers with puff pastry, sugar and cinnamon. Fold both sides towards the centre, chill the dough and bake slices in spaced batches.
Why this recipe works
Twelve small palmiers make six pastry servings. Sugar caramelises quickly in airflow. Timing includes two baking batches, 10 minutes chilling and 10 minutes cooling.
Recipe
Air fryer palmiers with puff pastry, sugar and cinnamon. Fold both sides towards the centre, chill the dough and bake slices in spaced batches.
Mix sugar and cinnamon. Scatter half on worktop, lay pastry as a square about 24 × 24 cm and gently press remaining cinnamon sugar on top.
Fold opposite sides halfway towards the centre, then again to the centre. Close halves like a book. Chill 10 minutes and cut across into twelve slices about 2 cm wide.
If required by the manufacturer, preheat for 3 minutes at 170 °C. Place six slices well spaced on a suitable shallow tray. Bake two batches about 12 minutes each at 170 °C, turning carefully after 7 minutes. Do not burn sugar dark. Use a heatproof dish suitable for the appliance, leaving space around it for airflow. Do not preheat with loose paper.
Release with a spatula and cool about 10 minutes. Do not touch hot caramel. Once cool check the centre is flaky and dry, not raw.
