Keep the rolls small
Four compact pieces cook more reliably than two very large ones. The dough must be baked in the centre, even if the crust already looks brown.
Low-fat quark, flour, some oil and baking powder make a fast mixed bread dough. The small rolls are baked at a moderate temperature, so that the middle is also cooked.
Why this recipe works
Quark-oil dough should only be mixed briefly. Long kneading will not make the dough lighter and can make it tough. The basic quantity is four small rolls with a raw weight of about 85 g. They are fresh best and have a finer, denser crumb than yeast dough left to rise for hours. Spreads and toppings are not part of the recipe.
Recipe
Four small rolls made from quark-oil dough can be done without yeast and proving time. Inside they remain compacter than classic yeast rolls.
Mix the flour, baking powder and salt. Add the quark, oil and milk and mix with a spoon or hands until dry flour is no longer visible. Don't eat raw dough.
Divide the dough into four equal pieces, form round with slightly moistened hands and cut the top flat crosswise. Do not dust with large amounts of flour.
Preheat for 3 minutes to 160 °C if necessary. Place the rolls in the basket with space between them and bake for about 18 minutes at 160 °C. After 12 minutes, check briefly; the surface should become golden brown, not dark.
Carefully check the underside of a roll: the crumb must not be raw or sticky. In case of doubt, test the temperature of the core with thermometers from 95 to 97 °C and bake longer. Allow to evaporate for about 5 minutes; this short rest period is taken into account in the preparation.

Quark rolls dry faster than some yeast rolls. Do not leave unnecessarily long in the hot device switched off.
