What matters
Thick courgette slices need longer than prawns.
Air fryer prawn courgette skewers with lemon oil and paprika. Thin folded vegetable ribbons match the short cooking time of raw thawed prawns.
Why this recipe works
Four short skewers make two small servings without rice. Weigh prawns peeled and deveined. Use suitable metal skewers and fully thawed large raw prawns; thawing needs extra time.
Recipe
Air fryer prawn courgette skewers with lemon oil and paprika. Thin folded vegetable ribbons match the short cooking time of raw thawed prawns.
Dry prawns. Slice courgette lengthways into ribbons about 2 mm thin. Weigh usable ribbons only; use broad offcuts elsewhere.
Mix oil, garlic, lemon, paprika, salt and pepper. Lightly coat prawns and ribbons, alternating loosely folded ribbons and prawns on four short skewers. Do not compress.
If required by the manufacturer, preheat for 3 minutes at 180 °C. Cook spaced apart about 10 minutes at 180 °C, turning gently halfway. Prawns must cook through their thickest part. Metal gets hot; use gloves. Check that the thickest part reaches at least 70 °C for 2 minutes; continue cooking if needed.
Plate and warn of hot skewer ends. Avoid extra cooking once safely done. Do not serve leftover raw marinade cold as sauce.
