Why this recipe works

Roast cooked beetroot, keep quark cool

Two vegetable servings with dip, without bread. Weigh plain cooked beetroot; raw roots do not fit this timing. Edges firm up, but do not become crisp potato fries.

Ingredients

2 servings

Method

  1. 1

    Prepare

Dry beetroot and cut wedges about 2 cm wide. Toss with oil, half the salt and pepper. Prepare a suitable shallow dish.

  2. 2

    Mix and season

Mix quark, lemon, garlic, parsley and remaining salt, then chill. Do not blend raw beetroot into it; keep it a separate fresh dip.

  3. 3

    Cook

If required by the manufacturer, preheat for 3 minutes at 180 °C. Roast wedges loosely about 18 minutes at 180 °C, turning once. Heat through and lightly dry edges without blackening. Allow extra batches if crowded. Use a heatproof dish suitable for the appliance, leaving space around it for airflow. Do not preheat with loose paper.

  4. 4

    Check and serve

Serve warm wedges and cold dip separately. Do not bake the quark. Beetroot stains; use an easy-clean surface.
