Why this recipe works
Two small flatbreads as light servings. Preparation includes 10 minutes dough rest. Weigh pear cored with washed edible skin and slice thinly. Cooking covers two batches.
Recipe
Air fryer pear Gorgonzola flatbread on thin yeast-free dough. Use firm pear, finely sliced onion and a modest cheese topping for a crisp base.
Knead flour, water, oil and salt smooth. Cover and rest about 10 minutes. Core and thinly slice pear, finely slice onion.
Halve dough and roll very thin to fit insert. Spread yogurt thinly, lay pear and onion flat, crumble Gorgonzola finely and pepper. Do not heap. Use a heatproof dish suitable for the appliance, leaving space around it for airflow. Do not preheat with loose paper.
If required by the manufacturer, preheat for 3 minutes at 180 °C. Bake consecutively about 12 minutes each at 180 °C. Check base with spatula: dough under topping must cook through. Extend if needed without burning cheese.
Lift and divide immediately. Pear may remain soft while thin edges turn lightly crisp. Extra honey is not part of the base recipe.
