What matters
Firm ripe plums slice more cleanly than overripe ones.
Air fryer plum tartlets with shortcrust pastry and almonds. Small shallow moulds hold fruit juices while thin plum wedges bake evenly.
Why this recipe works
Four small tartlets in moulds about 9 cm across. Weigh plums stoned with skins. Preparation includes 10 minutes cooling. Small baskets need extra batches.
Recipe
Air fryer plum tartlets with shortcrust pastry and almonds. Small shallow moulds hold fruit juices while thin plum wedges bake evenly.
Butter four moulds and line evenly with pastry. Form a low rim and prick bases. Stone plums and slice thin wedges. Use a heatproof dish suitable for the appliance, leaving space around it for airflow. Do not preheat with loose paper.
Spread almonds on bases. Lay plums flat, sprinkle sugar and cinnamon. Do not pour released cutting-bowl juice over.
If required by the manufacturer, preheat for 3 minutes at 160 °C. Bake about 22 minutes at 160 °C. Rim and base must bake through despite fruit juices. Extend if needed. Leave airflow gaps around moulds.
Cool about 10 minutes and release carefully. Serve very juicy tartlets in moulds rather than breaking soft bases. No icing included.
